Ingredients: 8 strips of bacon (diced) 1 12oz can of evaporated milk (2%) 1 large egg 1/2 t. salt 1/4 t. pepper pinch of cayenne 8 oz. elbow macaroni 1 T. butter 5 oz blue cheese (crumbled) 4 oz white cheddar (shredded)

Directions:Cook Bacon. In separate bowl, whisk together evaporated milk, egg, salt, pepper & cayenne. Set aside. Boil noodles according to package. Drain noodles and return to pot. Reduce heat to medium-low. Immediately add the butter and toss until melted. When melted pour in the milk mixture and stir until combined. continue cooking over medium-high heat stirring occasionally until sauce comes to a simmer (approx. 3-5 minutes). Remove pan from heat and add in cheeses. Stir until melted and then stir in bacon. Serve immediately. |
