3 c rhubarb - diced
1 c sugar
½ c water
¼ c cornstarch
½ tsp grated orange peel
1 block (8 oz) cream cheese, softened
½ c sugar
2 eggs
1 tsp vanilla
1 deep-dish pie shell

Directions:
Directions:
1. Prepare pie shell as per directions and cool.
2. Combine rhubarb, sugar, water, cornstarch and orange peel in a large saucepan. Bring to a boil over medium heat. Cook, stirring constantly, until mixture is thickened, about 1 minute. Remove from heat and cool for 5 - 10 minutes.
Topping:
4. Beat together cream cheese and 1/2 cup sugar until smooth.
5. Add eggs, one at a time, until blended. Beat in vanilla.
6. Pour rhubarb mixture into pie shell. Pour cream cheese topping over rhubarb mixture. Bake at 325 F for 35 - 40 minutes or until cream cheese topping is set. Cool pie on a rack then chill to serve.
