½ T. Flaxseeds, ground
1 T. Water
½ c. Creamy Peanut Butter
¼ c. Powdered Sugar, sifted
1 T. Honey
¼ tsp. Vanilla Extract
¼ tsp. Baking Soda
⅓ c. Dark Chocolate or semi-sweet chips

Directions:

1. Preheat oven to 350ºF.

2. Stir water into flax. Let sit. In another bowl, add peanut butter, sugar, honey, vanilla, and baking soda. Stir until combined. Add chocolate chips and flax. If mixture is too wet, place in fridge to firm for up to 30 minutes.

3. Place spoonful of cookies onto lined baking sheet and flatten a bit (they don't spread).

4. Bake for 8-10 minutes. Let cool for 10-15 minutes.
