1 to 2 lg Eggplants
Pizza or Marinara Sauce
Pizza Toppings
Mozzarella cheese, shredded

Directions:
Directions:
Preheat the oven to 425º. Spray a cookie sheet with non-stick spray. Slice the eggplant across the short diameter to create the pizza rounds. Slices should be about 1/2 inch thick. Place the slices flat on the cookie sheet. Place the sheet in the middle of the oven and bake for 20 to 25 minutes until slices are slightly brown. Pull the sheet out of the oven and flip the slices over. Spoon a thin layer of sauce onto each slice. Place your toppings on the sauce. Sprinkle on the cheese. Place the sheet back in the oven and bake for another 15 to 20 minutes until cheese is golden brown.
