1 1/2 cups oil
2 cups sugar
4 eggs
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1/2 tsp cloves
2 tsp baking soda
1 tsp salt
3 cups grated carrots
1 cup pecans (if desired)

Frosting:
3 ounces cream cheese
1/2 cup butter
1 tsp milk
1 tsp vanilla
1 3/4 cup powdered sugar

Directions:
Directions:
Beat together oil and sugar. Add eggs and mix well.
Mix together dry ingredients and gradually add to egg mixture.
Fold in grated carrots
*A trick for grating carrots is to fill a blender with peeled carrots. Fill with water and chop. Drain water from carrots. Done!

Add nuts if desired.

Bake at 350º in a greased 9x13 pan for 1 hour. Cool.

Prepare frosting by creaming together cream cheese, butter, milk, vanilla and powdered sugar. Spread on cooled cake.
