Bacon Cheeseburger Meatloaf Recipe

1 1/2 lbs. ground beef
1 c. crushed potato chips (measure them after not before crushing)
1/2 c. bread crumbs
1 egg
1/8 c. mustard
1 c. ketchup
1 spoonful relish
1/4 c. diced onion
2 T. dill pickle juice
4-6 slices of bacon, uncooked
8 oz. Velveeta, sliced

Directions:
Directions:
In a large mixing bowl, combine all ingredients except bacon and cheese. Take half of the meat mixture and press into a square baking dish. Cut Velveeta into slices and place on top of meat mixture. Top the Velveeta with remaining meat mixture. Lay slices of bacon on top of the meat mixture, it will cook while the meatloaf does. Bake uncovered at 350º for 45-55 minutes, or until cooked through. Let rest 10 minutes before cutting and serving. Enjoy!
