1 lb. tortellini
1 red onion (thinly sliced)
1 pint cherry tomatoes (halved)
1 cucumber (seeded & diced)
1 green bell pepper (diced)
4 oz. feta cheese

Dressing:
1/3 c. red wine vinegar
2 t. fresh lemon juice
1 t. sugar
2 t. italian seasoning
1/2 t. red pepper flakes
1/2 c. extra virgin olive oil
salt & pepper to taste

Directions:
Directions:
Bring a pot of salted water to a boil and cook the tortellini according to package instruction. Place onion in a bowl of cold water and drain after 5 minutes. When tortellini is finished toss with onions, cherry tomatoes, cucumber, bell pepper, feta cheese. In separate bowl, whisk together dressing ingredients except oil. Once ingredients are combined whisk in olive oil. Season to taste with salt & pepper. Pour dressing over tortellini. Serve warm or room temperature.

Personal Notes:
I do not add cucumbers. You can add anything you'd like to this and it would taste great. It makes a little extra dressing. Be certain to keep it so you can freshen up the salad after the tortellini soak up the first bit of dressing.
