1 (5lb) boneless pork shoulder (Boston Butt), extra fat trimmed
1 12oz. Beer
2 chipotles in adobo sauce
1 fresh pineapple, peeled and cored (roughly chopped)
1/2 c. red onion (chopped)
3 T. chili powder
2 T. fresh lime juice
2 T. white vinegar
2 T. kosher salt
1 t. ground cumin
1/2 t. black pepper

corn tortillas for serving.

Optional toppings: crumbled goat cheese, extra pineapple, chopped cilantro, red onion, avocado

Directions:
Directions:
Cut pork shoulder into 2" cubes. Add pork to slow cooker. In blender or food processor add chipotles in adobo, pineapple, red onion, chili powder, lime juice, white vinegar, salt, cumin and black pepper and puree mixture until smooth. Sir in beer until it is even. Pour mixture on top of pork until evenly coated.

Cook on low 8-10 hours or on hight for 4-5 hours until pork is completely tender and shreds easily with a fork. Use two forks to shred and then toss in the remaining juices. Serve warm with tortillas and garnish.

You can use canned pineapples if in a pinch but the fresh pineapple tastes better!
