3 cloves garlic - minced
3 tbsp. olive oil
1 tbsp. thyme
1 tbsp. rosemary
4 lb. rib roast
salt & pepper

blend & rub paste on port roast - let stand at room temperature - preheat oven to 500º roast for 15 minutes uncovered - then lower temperature to 325º & cook for 20 minutes per pound, until internal temperature reaches 145º - let sit 10 minutes before cutting
