2-1/2 C Peeled and sliced pie apples (Granny Smith work well).
9" Unbaked pie shell
1/3 C Sugar
1/4 t Ground nutmeg
1/4 t Cinnamon
1 Egg, beaten
2 T Honey
1/2 C Dark brown sugar, packed
2 T Butter
1/2 C or more Pecans

Directions:
Directions:
Combine apples, sugar and spices and mix lightly. Place apple mixture in pie shell and bake at 400º for 15 minutes. Mix honey, brown sugar and butter in a small saucepan and bring to a boil over medium heat. Add egg slowly while constantly whisking. Add pecans. Remove pie from oven and pour honey mixture over the top. Return the pie to the 400º oven and bake for 10 minutes. Reduce heat to 325º and continue for 25-30 minutes or until pie is set and apples are soft. Serve warm and enjoy!
