2 large unpeeled baking apples, cored and quartered.
1 large unpeeled orange, quartered
1 1/2 c. dried cranberries
2/3 c. shortening
2 c. sugar
4 eggs
1 tsp. lemon extract
4 c. flour
2 tsp. baking powder
1 1/2 tsp baking soda
1tsp. salt
2/3 c. orange juice
1 c. chopped walnuts

Directions:
In a blender or food processor process apples, orange and dried cranberries until finely chopped; set aside. In a large mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition; beat until light and fluffy. Beat in extract. Combine dry ingredients; add to creamed mixture alternately with orange juice. Stir in fruit mixture and nuts. Pour into three greased 8x4x2" loaf pans. Bake at 350º for 55-55 minutes or until a wooden pick inserted near the center comes out clean. Cool in pans for 10 minutes before removing to wire racks to cool completely.
