2 cups walnuts
1 tbs cumin
1/2 tbs coriander
1 tsp chili powder
pinch of cayenne
2 tbs tamari
collard greens, (washed with stems trimmed 2 inches from bottom leaf)
salsa

Directions:
Directions:
1.Put walnuts in food processor and process until chunk. Scrape the ground nuts into a bowl and mix in the cumin, coriander, chili powder and cayenne. Add the tamari and mix again.

2.Place collard green green with the dark edge facing down on a cutting board. Place about 1/4 to 1/3 cup of the nutmeat mixture in the middle of the leaf. Top with salsa.

3. To assemble, roll up burrito-style. Fold one of the long ends in then both the end pieces, then the other long piece, and tuck in firmly. If you would like to place folded edge down on cutting board and slice firmly into pieces into diagonal
