3/4 cup whole wheat flour
3/4 cup all purpose flour
2 tablespoons sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup dried currants
2 teaspoons caraway seeds (optional)
3/4 cup buttermilk, plus additional for brushing

Directions:
Directions:
1. Preheat oven to 400º. Spray a pie pan with oil.
2. Mix the flours, sugar, baking soda, and salt together. Stir in the currants and caraway seeds. Make a well in the middle of the dry ingredients and gradually add buttermilk. Stir until just combined - Do not over mix.
3. Turn the dough onto a lightly floured surface and knead several times. Form dough into a ball, flatten slightly and place in the prepared pan. Brush the top with buttermilk and dust with flour.
4. Bake until it is brown on top and sounds hollow when tapped on the bottom, 30 to 40 minutes.

I first tried soda bread at a bed and breakfast in Ireland more than twenty years ago. It was an unforgettable experience that I wanted to recreate!
