Ingredients:  
Ingredients:  
1 can Great Northern White beans, drained
1 avocado, chopped
1 Roma tomato, chopped
1/4 Vidalia or other sweet onion, chopped

Vinaigrette Ingredients:

2 tbsp. olive oil
2 tbsp. lemon juice. fresh if possible
1 teaspoon of a quality mustard (not yellow)
fresh basil to taste
salt & pepper to taste

Directions:
Directions:
Mix white beans, avocado, tomato and onion together. Set aside.

Whisk vinaigrette ingredients together then pour over salad mixture and mix well. Refrigerate for several hours before serving.
