2 tbsp olive oil
1 large onion, peeled, diced 1/2" pieces
2 carrots, peeled, diced 1/2" pieces
1 can [28 oz] Pumpkin Puree [not pumpkin pie filling]
1 tbsp. sea salt
1 tsp black pepper
1 tsp. garam masala [or any curry powder]
1 bay leaf
2 quarts vegetable or chicken broth
1 cup half & half [leave out if you want it vegan]

Directions:
Directions:
In a large soup pot, heat oil. Add onions, carrots, bay leaf and spices, and saute until vegetable have softened. Add pumpkin puree and vegetable broth, mix well and simmer until vegetables are tender and flavors have melded.
Puree soup using an immersion mixer until smooth. Add half & half and serve hot.

For a Portuguese style pumpkin soup, omit curry powder and half and half. Add 1 link chourico, casing removed and diced small [cook with the vegetables] and add 1/2 cup rice or soup pasta...
