Ingredients: Pastini pasta butter milk water cheese optional: egg

Directions: |
Directions:1. Place 3 or 4 tablespoons of dry pastini in deep 1 or 2 quart "corning" bowl.
2. Add one tablespoon of butter and cover with water to 1/4" or 1/2" above pastini.
3. Place uncovered in microwave. NOTE: to avoid boil over and easy removal place a large dinner plate under the bowl.
4. Cook on HIGH for 1 to 2 minutes at a time. Stir.
5. As water is absorbed add milk to pastini. Continue to cook at 1 minute intervals, stirring in between.
6. Continue to add a bit of milk and cook until pastini doubles in size and is very soft to the taste.
7. When pastini has absorbed most of the milk it will look like a watery paste, add grated cheese.
8. OPTIONAL: Beat one egg with a little milk and add to pastini. Cook for 2 or 3 minutes and mix well.
9. Allow pastini to cool a bit as it will continue to absorb the liquid. You may wish to add a tiny bit more milk to bring it to your desired consistency. |

Notes: This was the Italian baby's first solid food. We have eaten it for generations and now the great grandchildren are enjoying it! Nana always prepared pastini on the stove. She constantly stirred and added milk as needed. I like cooking in the microwave as the clean up is so much easier! You still must stir and add liquid, the difference being in 2 minutes intervals rather than constantly.
