14 oz. pink salmon
15 oz. mackerel
2 lrg. egg, lightly beaten
1 med onion, chopped
½ green bell pepper, finely chopped
½ c. cornmeal mix
4 T. all purpose flour
⅛ tsp. garlic salt
⅛ tsp. black pepper
2 c. vegetable oil

Directions:
Directions:
Drain salmon and mackerel; place in a medium bowl; remove skin and bones, and mash well. Stir in eggs, onion, green pepper, cornmeal, and flour until blended. Form into patties (batter will be stiff). Heat oil in a large skillet over medium high heat. Place salmon patties into hot oil. Fry with lid on skillet, in batches, 2 to 3 minutes on each side or until golden brown. Drain on paper towels. Keep warm on a wire rack on a cookie sheet in a 200 degree oven until ready to serve.
