1/4 cup olive oil...
1/2 cup olive oil, this is correct, 1/2 cup is for shallots, 1/4 cup is for fish...
2 t fresh lemon juice...
2 shallots, sliced thin, separated into small rings...
3 filets, 5 6 oz. each
1/4 t freshly ground black pepper...
2 large garlic cloves, crushed...
Lemon wedges, for garnish...

Fish

Combine 1/4 cup olive oil, lemon juice, garlic and pepper in an 8 by 8 glass cooking dish and be sure to coat fish on all sides, now set this dish of fish aside...
Let it stand for 30 minutes...

Shallots

Heat 1/2cup olive oil in a deep sauté pan over medium high heat...
At this point I mix 1/4 cup flour and 1 t corn starch together and get shallots covered with this mixture, shaking off excess flour...
Once oil is just smoking I drop in the shallots and cook until golden brown, once they true brown , using a slotted spoon remove to paper towels and salt lightly...
Set this aside or in warm oven..

Back to fish

After 25 minutes heat a non-stick sauté pan over medium-high heat, once hot add fish to pan, sauté 3 minutes and turn over a s sauté 2 1/2 minutes longer, remove to serving platter, top each filet with a t of lemon butter and top with shallots, serve...
So, so, good!

Serve with cool white wine, cool summer salad and asparagus or sautéed spinach with sliced garlic and fresh lemon juice....
