1/2 cup butter, softened
1 cup sugar
2 eggs
1/2 cup milk (I use buttermilk)
2 tbsp. lemon juice
2 tsp grated lemon peel
2 cups flour
2 tsp baking powder
Dash of salt
2 cups fresh or frozen blueberries
Glaze:
3/4 cup powdered sugar
1 tbsp. lemon juice
1/2 tsp butter, melted
1/8 tsp vanilla

Directions:
Directions:
Preheat oven to 370º. In large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in milk, lemon juice and peel. Combine flour, baking powder and salt. Add to creamed mixture just until moistened. Fold in blueberries. (If using frozen to not thaw to avoid discoloring batter) Fill muffin tins 3/4 full (18 muffins). Bake for 25-30 minutes or until toothpick comes out clean. Cool in pan for 5 minutes before moving to wire rack.

In small bowl, combine powdered sugar, lemon juice, butter and vanilla: drizzle over warm muffins. **Good without glaze too!**
