1 cup salted butter, softened
1/2 cup sugar
1 tbsp. vanilla extract
2 cups flour

Directions:
Directions:
In a medium mixing bowl, add butter and sugar; cream until light and fluffy. Add vanilla; mix well. In three batches, stir in the flour and mix just until combined. Scoop out the dough with a 1-ounce scoop or use a tablespoon to scoop the dough. Roll into balls quickly, as the more you handle the dough, the more the butter melts. Place on parchment-lined cookie sheets about 2 inches apart. Using your 3 middle fingers, press the dough down so that the edges are about 1/4 inch thick. Bake in a preheated 375º oven for 15 to 18 minutes or until the edges of the cookies begin to turn golden brown. Let the cookies cool on the sheets for 5 minutes and then move to wire racks to finish cooling.

This recipe came from one of the Chicago Public School's lunchroom ladies. Years ago, before they used premade everything, the lunchroom ladies would make these cookies every day for the students!
