1/2 cup butter
1/4 cup brown sugar
1 Tbs. lemon rind zest
1 tsp. vanilla

1 egg separated
1 cup flour
1/4 cup water
6 oz. chocolate chips
1/4 cup brown sugar

2 Tbs. confectionery sugar

Preheat oven to 375
Line 8x8 or 9x9 pan with wax paper - cutting covers so that bottom is flat. (yes do this)
Beat first four ingredients.
Beat in egg yolk (just the yolk)
Add flour and water and beat
Add chocolate chips.

In separate bowl beat egg whites till stiff.
Add 1/4 cup brown sugar, beat until stiff and satiny

Fold in with other ingredients.
Spread into waxed papered 8x8 pan.
Bake for 25 minutes.
Cool in pan. Remove with wax paper. Sprinkle with confectionery sugar.
Cut into squares.

This recipe is my mother-in-laws. My kids and grandchildren love it. But it must be done with the wax paper and 8x8 or 9x9 pan. Do not double recipe. Make 2 separate batches.
