Christmas Roast Recipe

8-10 Pound Prime Rib Roast
4 cans of purple plums
1 large can of frozen lemonade
1 large bottle of Zesty Italian salad dressing
1 bottle of low-salt soy sauce
1 tbs. minced ginger (or less to taste)

Pit the plums and blend in a blender. Add the frozen lemonade. Add 1/4 cup of soy sauce. Add ginger. Blend well and refrigerate.

Marinate the roast in the Italian dressing for 24 hours in the refrigerator.

The next day roast the meat at 325 until meat thermometer reads rare. Start basing with the plum sauce every 15 minutes until meat is medium rare or medium.

Mix 1 cup of the Italian dressing marinade with 1/2 of the plum sauce and heat in a large skillet.

When meat is done, remove from oven and let rest for 15 minutes. Slice mean and arrange on platter. Pour some of the heated plum sauce over the meat. Serve the rest of the heated plum sauce in a gravy dish for those that want a little more sauce.
