Cream Pie Microwave Recipe

9 “ baked pastry shell

¾ cup sugar
3 T corn starch
Pinch salt
2 cups mile or half & half
3 egg yolks, slightly beaten (save the whites)
2 T butter or margarine
1 t. vanilla

Directions:
Directions:
Combine sugar, corn starch and salt in 2 quart bowl. Gradually stir in milk. Microwave 8 minutes on “8” or until thickened, stirring twice with wire whip. (I use full power on first bake & watch it closely the last 2 minutes)
Stir a little of the hot mixture into egg yolks. Blend warmed yolks into hot mixture. Microwave 2 minutes on “8” or until custard coats a metal spoon, stirring once.
Stir in butter and vanilla until butter melts. Cool, Pour into baked pie shell

Meringue
3 egg whites
1/4 t cream of tartar
6 T sugar

Beat egg white with cream of tartar until foamy. Gradually beat in sugar. Continue beating until stiff peaks form. Gently spread meringue over cream filling, sealing meringue to edges of crust. Brown under conventional broiler.

For Coconut Cream: Add 1 cup flaked coconut with butter. Sprinkle 1/3 cup coconut over meringue before browning.

For Chocolate Cream: Follow above recipe, but increase sugar to 1 cup. Melt 2 sqs (1 oz each) unsweetened chocolate. Add with vanilla

Banana Cream
Slice 2 ripe bananas into bottom of baked pie shell, or graham cracker crust. Pour vanilla cream filling over bananas. Top with meringue
