10 Roma tomatoes, seeded and diced
1 jalapeņo pepper, finely diced (optional)
1/2 cup fresh cilantro, chopped
1/4 red onion, finely diced
1/4 yellow onion, finely diced
1/8 cup brown sugar, firmly packed
1/8 cup red wine vinegar
2 tsp. lemon juice
2 tsp. lime juice
fine sea salt to taste

In a large bowl, gently combine all the ingredients together. Add salt to taste (start with 1/2 teaspoon and increase as desired.) Refrigerate before serving.
Note: I suggest wearing gloves when dicing the jalapeņo pepper. Remove the seeds and membranes if you don't want the Pico de Gallo to be hot.
