Directions:Combine flour, yeast, sugar, and salt in a mixing bowl and start mixing slowly. Combine water, milk, and oil in a small bowl. While the mixer is on slow, add the liquid the dry ingredients. Increase the speed to medium, and mix for 3 to 4 minutes. Let rest for 5 minutes then mix again for 3 to 4 minutes. Kifle dough should be medium firm. If it is too soft, add more flour. Dust your working surface with flour, remove the dough from the bowl and knead it by hand 10 to 20 times. Place back in the bowl, cover with a kitchen towel and let rise until double in volume, about 1 hour. Divide the dough into two. Roll each piece into a 18 inch circle. With a pizza cutter, cut 8 pizza-shaped pieces. To form a kifle, first fold in both corners at the short side of the triangle. Now, pressing down, roll the bread towards the end tip. You can also shape it into a crescent. Place in onto a greased baking sheet with the end tip facing down. Repeat with remaining triangles. Cover the sheet of kifle and let rise for 30 minutes. Lightly beat an egg and brush over the kifle, then sprinkle with salt. Bake at 400º for 15 to 20 minutes or until golden brown. Remove from oven, brush with melted butter and cover for 10 minutes. Serve warm with butter, cream cheese, pate, jam or honey. |
