1 clove garlic, crushed
1 bay leaf, crumbled
1 Tbs rock or kosher salt
1 Tbs smoked paprika
½ tsp chili flakes
½ tsp freshly ground pepper
3 Tbs olive oil
3 Tbs white wine

Bone-in, Skin-on Chicken Pieces (I used a whole cut up chicken)
1 lemon or lime, halved (optional garnish)

1. Mix all ingredients together in a small bowl.

2. Rub over chicken thighs and marinate in the fridge for 1 to 24 hours.

3. Grill chicken on the barbecue on medium-high heat until chicken is tender and the juices run clear when gently pressed.

OR

Preheat oven to 375 degrees. Lay chicken in a baking dish and bake for 30-40 minutes (until chicken is tender and the juices run clear when gently pressed).

4. Squeeze a bit of lemon or lime over the cooked chicken for an added burst of flavor.

This has the right amount of kick with the paprika and chili flakes. The wine really adds flavor, though the original recipe I tried didn't call for it. It reminds me of the chicken you order at Portuguese restaurants.
