Pastry for a 2-crust 9" pie
6 cups of fresh peaches, sliced (about 6 peaches)
1 teaspoon lemon juice
1-1/2 cups sugar
1/4 cup flour (or more)
1 teaspoon cinnamon
2 tablespoons butter
Additional cinnamon and white sugar as needed

Directions:

Mix the cut peaches with the lemon juice. Stir together sugar, flour and cinnamon. Mix well with the peaches. Put fruit mixture in a pastry lined pie plate. Dot with butter and sprinkle with more cinnamon. Wet edge of crust with water and your finger. Gently place the second crust over your pie and tuck this layer underneath the bottom layer at the edges. Flute edges together. Cut vents in top for steam to escape. Sprinkle the top with a bit of milk or cream, using wadded up wax paper. Sprinkle generously with white sugar. Cover crust edges with pastry shields. Bake at 400º for 15 minutes. Turn heat down to 375º and bake for an additional 20 - 25 minutes or until pie is lightly browned.

For a 10" pie, use the following instead: 7 cups sliced peaches, 1-1/4 teaspoon lemon juice, 1-3/4 cup sugar, 1/2 cup flour, 1-1/4 teaspoon cinnamon, 3 tablespoons butter.
