48 oz.- your favorite tomato suace - homemade or other
2T Olive oil
1 lb Italian sausage - hot, sweet or combo, casing removed
1 Vidalia onion, cut into thin strips
2 red bell peppers, cut into thin strips
2 yellow bell peppers, cut into thin strips
3T red wine vinegar
1 (1lb.) pkg. uncooked cavatelli pasta, or other such as penne or ziti
Basil, oregano, parmesan cheese

Directions:
Directions:
Heat 1T oil & cook sausage breaking into big chunks. Stir sausage into tomato sauce. Set aside.

Add onion, peppers & remaining oil to skillet & cook until soft, stirring occasionally, until soft, about 5 minutes. Add red wine vinegar & cook until liquid has evaporated about 2 minutes. Stir peppers & onions into tomato sauce.

Cook pasta. Fold pasta, basil & oregano into tomato sauce mixture. Garnish with Parmesan cheese.
