3 medium potatoes (about 4 cups)
1/2 cup water
1/4 cup vinegar, or a little less
1/4 cup sugar
1 medium onion
1 tbsp. bacon fat
1 tbsp. corn starch, dissolved in a little cold water
1/2 tsp salt
3 strips bacon, cut and fried

Directions:
Directions:
Cook potatoes in salted water till tender, peel and slice. Cook dressing till onions are tender. Layer potatoes and bacon in roaster. Pour dressing over. Stir only till potatoes are coated. Bake till heated through.
