1 cup unsalted butter, softened
3/4 cup light brown sugar, firmly packed
1 egg
1 tsp. vanilla extract
2 1/4 cups flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 cup sugar for rolling
Directions:
Directions:
Cream together butter and brown sugar in a stand mixer fitted with the paddle attachment. Add the egg and vanilla; mix until well-combined. In a separate bowl, whisk together the flour, salt and baking powder. Add the flour mixture to the butter mixture and stir just until combined. Refrigerate dough for 30 to 60 minutes. Scoop out dough, approximately 1 1/2 tablespoons, and roll into balls. Roll the balls in the sugar. Place onto parchment-lined cookie sheets. Press down with the tines of a fork. In a preheated 350º oven bake for 10 to 12 minutes, rotating halfway through. The edges will just start to be lightly brown. Remove to a baking rack to finish cooling.

These are not hard to make and remind you of a butter cookie with a touch of caramel. When we were testing this recipe, we had some men working outside on the yard. I brought them a plate of cookies and not only did they eat them immediately, they knocked on the door and asked if they could have some more, along with the recipe!
