1/3 cup flour
2/3 cup sugar
1/4 tsp salt
2 cups milk scalded
3 slightly beaten egg yolks
2 tbsp. butter
1/2 tsp vanilla
9 inch pastry shell
3 egg whites
6 tbsp. sugar

Directions:
Directions:
Mix flour and 2/3 cup sugar and salt; gradually add to hot milk.
Cook in saucepan until thickened, stirring constantly.
Add small amount of hot mixture.
Cook 2 minutes, Cool.
Add butter and vanilla.
Pour into baked shell and cover with meringue made of egg whites and 6 tbsp. of sugar.
Bake until lightly browned.

Time 12 to 15 minutes
Temperature. 325º to 350º

Variations of Cream Pie

Banana: Slice 2 to 3 bananas in shell then add cream filling

Butterscotch: Substitute 1 cup brown sugar for 2/3 cup white sugar, increase butter to 3 tbsp.

Caramel: Caramelize 1/4 cup of sugar. Gradually add scalded milk and mix well.

Chocolate: Increase sugar to 1 cup: melt 2 one ounce squares of chocolate in scalded milk. Chocolate will melt over low heat without being grated. Cocoa may be used in place of chocolate.

Coconut: Add 1 cup moist coconut to filling, Sprinkle coconut over meringue before browning.

Date: Add 1 cup pitted chopped dates to filling after it has cooled.

Pineapple: Add 1/2 cup thoroughly drained pineapple to cooled filling.
