1 pkt. Quick Rise Yeast
3/4 C sugar
1 C milk
1/4 lb. butter
1/4 tsp. salt
5 C flour
3 eggs
/14 lb. raisins (soaked and dried)
PAM for pans
Egg whites (to brush tops if you want)

Directions:
Directions:
Heat 1 C milk, 1/4 lb. butter till small bubbles appear around edges (do NOT boil) . In large pot, mix 3/4 C sugar, 2 C flour, yeast. Mix well. Add butter/milkl mixture and mix well. Ad 1 C flour - mix. Add eggs - one at a time and mix well. Add last 2 C flour and knead 10 minutes. If still sticky, add 1/2 C more flour) and knead 5 more minutes.

Add raisins and mix. Let rest 10 minutes.

Punch down and put into pans cover and let rise in a warm place till over top of loaf pan.
For shiny surface, brush unbaked loaves with beaten egg white.

Bake at 350º about 30 minutes until browned and center springs back when pressed with finger. Or tip loaf out and tap bottom -- if done, will sound hollow.
