1½ cups flour
1¼ cups sugar
1½ tsp baking soda
1½ tsp cinnamon
½ tsp salt
2 jars (4½ oz each) strained carrots
2/3 cup oil
2 eggs beaten
½ tsp vanilla
1 - 8 oz can crushed pineapple drained
2/3 cup coconut
½ cup chopped walnuts

Cream Cheese Frosting:
1 - 4 oz pkg. cream cheese
1 Tbsp milk
½ tsp vanilla
3 cups icing sugar

Mix flour, sugar, soda, cinnamon and salt. Add carrots, oil, eggs, vanilla and mix well. Stir in pineapple, coconut and walnuts. Bake at 350°F for 40-45 minutes until dry toothpick comes clean. Use 9"x13" pan.

Icing:
Combine softened cream cheese with milk and vanilla. Mix until well blended. Gradually add sugar, mixing well. If too stiff, add small amount of milk.
