Part 1:
2 tsp cinnamon
2 cups flour
2 cups sugar
2 tsp baking powder
½ tsp salt
1½ tsp baking soda

Part 2:
1 cup oil
4 eggs well beaten
½ cup walnuts
2 cups grated carrots
½ cup pineapple juice
1 cup crushed pineapple

Icing:
4 oz cream cheese
½ cup butter
2 tsp vanilla
2 2/3 cup icing sugar

Directions:

Mix ingredients in Part 1 well.

Mix together ingredients in Part 2.

Add both parts together and mix. Makes 2 - 9" layers. Bake at 350°F for 40 minutes.

Mix icing ingredients until smooth. Once cakes are cooled, spread icing over top.

If a less sweet icing is desired, use 8 oz cream cheese and 2 cups of sugar. Ice cake when cool.
