2 large or 3 small bananas
2 cups flour
½ tsp baking powder
¾ tsp baking soda
½ tsp salt
½ cup shortening
1 ½ cup white sugar
2 eggs
1 tsp vanilla
¼ cup sour milk (can add 1-2 Tbsp vinegar to regular milk)

Icing:
1-2 Tbsp soft butter
1 ½ - 2 cup icing sugar
milk
dash salt
½ tsp vanilla

Cake:
Sift flour, baking powder & soda, salt. Place shortening, sugar, eggs and vanilla into a large bowl and beat for two minutes. Add sour milk. Alternately add mashed bananas and flour until mixed. Bake at 350 F in a 9x12” pan for 30 minutes.

Icing:
Combine all ingredients except milk. Add milk 1 Tbsp at a time until desired consistency is reached. Spread on cooled banana bread.
