½ LB uncooked shrimp, shelled, deveined and chopped
½ LB uncooked lean pork
½ cup chopped celery stalks and leaves
¼ cup chopped green onions
1 - 8 oz can water chestnuts, drained
2 eggs lightly beaten
1 Tbsp soy sauce
¼ cup soft bread crumbs
½ tsp salt
¼ tsp pepper

Dipping Sauce:

½ cup plain yogurt
½ cup fruit chutney, finely chopped
½ tsp curry powder
¼ cup dry white wine
¼ tsp grated ginger root

Mix together dipping sauce ingredients.
Preheat oven to 375°F. In a food processor, chop together shrimp, pork, celery, green onions, and water chestnuts. Process until finely chopped but not puréed. In large bowl, combine eggs, soy sauce, bread crumbs, salt, pepper and meat mixture. Shape into 3 dozen 1" balls. Arrange on a rack in a broiler pan. Bake 18-20 minutes or until golden brown. Drain, discard drippings. Serve warm with toothpicks. To store, put in a container with a tight fitting lid or freezer bag. Can be stored for up to 3 weeks in freezer. Thaw overnight and reheat at 350°F for 15 minutes.
