6 Egg Yolks--
3 oz. Sugar--- Whip until firm

¼ gal. Whipping Cream-----------
¼ gal Cream and Glaze (cold)---whip cream and add cream and glaze

Cream and Glaze
5.5 oz White Sugar
1 ¼ lb. Whipping Cream
6 Egg Yolks
1 Vine of Vanilla Beans

Cook in water bath until thick. Stir constantly. Refrigerate.

Use for chocolate, lemon, kaluah

1 oz. Gelatin in 2 oz. Sugar, 4 oz. Water in pot. Warm to dissolve. Lower temperature with a little whip cream until nice and cold. Add all ingredients together. Divide into 3 parts. Large and Refrigerate
1. Plain Jell-O (Vanilla)
2. Strong Coffee Flavor
3. 1 oz. Cocoa
