3 cups (frozen) shredded potatoes
3/4 cup shredded cheddar cheese
1 cup diced ham
1/4 cup onion
1 (12oz) can evaporated milk
4 eggs
Salt & Pepper

Directions:
Directions:
Preheat oven to 350º
Spray 2qt square pan
Mix potato, cheese, onion, ham in bowl
Salt & Pepper & pour in pan
Mix eggs & milk and pour in pan over mixture
Add extra cheese on top
Cook (uncovered) for 45-60 minutes (or until a clean knife comes out)

This is a good casserole to make that reheats well. If you like, you can use ham, bacon or sausage. If you double the recipe, cook it in a 9"x13" pan.
