4 cups peeled, chopped apples
2 beaten eggs
1/2 cup canola oil
2 cups sugar
1/2 cup raisins
1/2 cup chopped walnuts

2 cups flour
2 tsp pumpkin pie spice
1 1/2 tsp baking soda
1/2 tsp salt

Directions:
Directions:
Start with the apples in a big mixing bowl.
Add the next five ingredients and stir with spoon.
Sift in small bowl the four dry ingredients.
Add them to the big bowl and stir together with spoon.
Bake in 350º oven for one hour.

Top with powdered sugar or with Sharon's caramel icing.

This is the cake that mom topped with caramel icing. Whenever she made this, Sharon would eat most of the icing off the cake. No exaggeration.
