Ingredients:  
1 cup fresh beets, peeled and chunked (1/2 to 1 inch pieces)
1 cup carrots, similarly chopped
1 cup Brussels sprouts, cut in half
1 yellow bell pepper, you know the drill
1 med onion, same thing
2 T olive oil--give or take
Sea salt to taste
Sprig of fresh rosemary

Directions:
Directions:
Toss veggies together with olive oil and salt on baking sheet.
Add Rosemary.
Cook in preheated 375º oven for approx. 30-40 minutes, depending on your preference, stirring a couple times during cooking.

Use whatever veggies you like.
