6 bacon strips, chopped
2 1/2 lbs. small red potatoes, cubed
8 oz. cream cheese, softened
1 can condensed cream of potato soup, undiluted
1/4 cup milk
1 envelope buttermilk ranch salad dressing mix
3 tbsp. thinly sliced green onions

In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Drain drippings; reserve 1 tablespoon. Place the potatoes in a 3-quart slow cooker. In a large bowl, mix cream cheese, soup, milk, dressing mix and reserved drippings until blended; stir into potatoes. Sprinkle with bacon. Cook, covered, on low for 7 to 8 hours or until potatoes are tender. Top with green onions.

My friend Lynn makes this dish for almost every potluck dinner. It is always the first dish to be gobbled up. Since it is one of the few things she knows how to make really well, she always coveted her recipe. It took me years to get it, but she finally gave in!
