1 (12 ounce) package jumbo shells
1 1/2 pounds ricotta cheese
3 eggs
2 Tablespoons parsley
1/2 cup Parmesan cheese
1/2 cup each : mozzarella, provolone, muenster, and brick cheese
1 teaspoon salt
1/4 teaspoon pepper
3 cups Prego spaghetti sauce

Directions:
Directions:
Prepare shells according to directions on box. Drain. Mix Ricotta cheese with eggs, parsley, cheeses, salt and pepper. Spread a thin layer of sauce in a 9: x 13" pan. Fill shells with filling. Place shells ina single layer, top with sauce and sprinkle with Parmesan cheese. Cover; bake at 350* oven 25-30 minutes or until hot and bubbly. Top with additional grated cheese.

*Spinach shells: follow same cheese filling then add:
1 (10 ounce) box frozen chopped spinach, cooked and drained well.
add while cooking: 3/4 cup chopped onion and a clove of garlic minced. After being drained, add 2 Tablespoons butter. Fold cooled spinach mixture to cheese mixture and fill shells. I use a white Alfredo sauce when making the spinach shells.
