2 lbs. smoked turkey or salt pork
6 -7 c. water
2 lbs. turnip greens
2 lbs. mustard greens
2 T. sugar
½ tsp. crushed red pepper
1 T. salt

Directions:
Directions:
Cook turkey or salt pork in water until done, approximately 1 hour. While meat is cooking , clean greens by trimming away any bruised or blemished spots with a sharp knife. Remove extra stems. Wash greens in several changes of cold water with salt added, followed by several changes of clear water to remove all traces of dirt or sand. Add greens and all ingredients to the meat. Cover and bring to a boil. Reduce to low heat and cook, stirring frequently, until greens are tender and done, approximately 1 hour. Add additional hot water as needed.

Variations: add spinach, kale or other greens and/or chopped green onions to green mixture and cook for another 15 minutes before serving.
