2 qt. fresh cherries (pitted if desired)
2 c. White vinegar
1 c. Water
Equal part sugar (to the cherries)
2 tsp. Almond extract
1/2 tsp citric acid
Red food coloring (optional)

Directions:
Directions:
Cover cherries in vinegar/water and let set for 2 days in fridge.
Drain and rinse.
Add sugar and let stand for 4 weeks in a cool dry place (fridge) rotating or stirring occasionally only to dissolve all the sugar.
Add other ingredients and can or freeze.

This is a long process recipe, but my kids love the results! We are currently trying the recipe with fresh peach pieces too!
