Ingredients:  
1 chopped onion
3 T melted butter
1/2 cup grated cheddar cheese
1 pkg corn muffin mix
1 16.5 ounce can creamed corn
1 egg
2 T milk
1/2 cup sour cream

Directions:
Directions:
Heat oven to 425º. Melt butter in pan in oven. Add onions and return to oven until onions are limp. Scoop onion out of pan and save. Empty contents of mix into bowl and blend in egg, milk and corn. Turn into pan and top with onions, sour cream and cheese. Bake for 35 minutes.

(I sometimes lover the temp. and cook longer.)
