1 c. vegetable shortening 2 tsp. baking powder
1 c. white sugar ½ tsp. salt
1 c. brown sugar 2 eggs, beaten
2 c. flour 2 c. rolled oats
1 tsp. soda 1 c. coconut
1 c. (or pkg.) chocolate chips 1 tsp. vanilla

Directions:
Directions:
Pre-heat oven to 350 degrees. Cream shortening, white and brown sugar until well combined. Sift dry ingredients into separate bowl and add to sugar mixture gradually until thoroughly mixed. Roll small balls and add 4-5 chips per ball OR add chips directly to mixture and then form small balls. Bake on ungreased, shiny cookie sheet 10-11 minutes or until lightly browned.
