Freeze ½ pound flank steak for 10 minutes; slice very thinly. Thread onto skewers. Brush with 2 tablespoons balsamic vinegar, and season with salt and pepper. Grill over medium-high heat until cooked through, 1 to 2 minutes per side. Serve with ½ cup blue cheese dressing and sprinkle with 2 sliced scallions.
