1/2 cup Mayonaise
2 sticks butter, melted
3 sleeves Ritz crackers, crushed
1 lemon- juice and zest [separate]
1/4 cup Sherry
2 tsp. salt
1tsp. black pepper
1 tbsp. dried dill

2# fozen pollock filets, thawed
1# bay scallops, thawed
1# peeled and deveined shrimp, thawed
1 pkg. imitation crab chunks

Heat oven to 375º.
In a large roasting pan, spread mayo on the bottom. Add thawed and patted dry seafood in the following order; pollock, shrimp, scallops, crab meat. Season with one teaspoon salt and half a teaspoon black pepper. Set aside.

To make the topping, heat butter and sherry in a large skillet, when melted, add dill, salt, pepper, lemon juice and zest. Add cracker crumbs and mix until combined.

Top seafood with cracker/butter crumb mixture and bake for 30-35 minutes until seafood is cooked through and topping is golden brown.
Serve Hot.

This is so very rich, so I only make this on Christmas Eve, as part of the feast of the 7 fishes. Serve with a Salad with a vinaigrette.
