4 tbsp. butter
1/3 c. flour
1 c. milk
1 c. heavy cream
1/8 tsp. fresh grated nutmeg
salt and pepper to taste
1 clove of fresh garlic, minced
grated Cheddar and Swiss cheese
7-8 Yukon Gold Potatoes, slice 1/4" thick

Cook the butter and flour to make a roux, about 3 minutes on low heat. Do not brown. Add milk and cream, cook on high stirring constantly till it reaches a boil. Turn on low to simmer. Add salt and pepper and garlic. Add cheeses and simmer until they melt. Add fresh nutmeg. Place in a small casserole dish.

Cut Yukon gold potatoes , skins on about 1/4 inch thick. Layer over top of cheese. Top with additional shredded cheese. Bake at 300º 45 minutes till potatoes are tender. Can broil or crank heat for the last few minutes to give a golden brown top.
