1/2 stick butter...
2 large Chayote squash, peeled, halved lengthwise, pitted and sliced thinly...
2 T chopped fresh parsley, divided...
2 garlic cloves, chopped...
2 green onions, sliced thinly...

Directions:
Directions:
Melt butter in pan, over medium-high heat...
Add Chayote, 1 T of parsley and the garlic...
Sauté until Chayote is crisp-tender, about 4 minutes, add the green onion..
Cook for 30 seconds more, stirring...
Transfer to a bowl, sprinkle with remaining parsley and serve...
Enjoy!
